First off, awesome video, RR is getting better. Secondly, why is this method the only one ever shown? Personally I am plucking that sucker to maintain the skin. The meat without the skin is just going to get dry no matter how you cook it.

Steven Szabo it will not be dry if you cut away shiny or silver membrane covering outside of breast meat, soak it in saltwater over night then dip in milk and egg wash and roll in seasoned flour and deep fat fry in peanut oil. It will be tender and very juicy. You also can smoke or bake a skinless turkey breast by covering it with bacon. Bacon acts like the skin holds in natural juice and adds flavor.

Steven Szabo Well actually wild turkey is extremely moist if you have actually ever had it! There is next to no fat on them so the skin is hardly worth it.

Yea shouldn't need to apply pressure if the knife is razor sharp.
